11th National Fair of Prosciutto and Dry-Cured Meat Products, Sinj, 2016.
The 11th National Fair of Prosciutto is being held thanks to the generous support from the following sponsors: The President of the Republic of Croatia, Ministry of Agriculture, Ministry of Entrepreneurship and Crafts, Ministry of Regional Development and EU funds, Ministry of Tourism, Croatian Chamber of Economy – Split Chamber, Hamag Bicro, HBOR, LAG-Cetinska Krajina, Sinj Tourist Board, Split-Dalmatia County Tourist Board, Erste Bank, Merkur security, and with the media coverage from Slobodna Dalmacija, Radio Dalmacija, and Meso magazine.
All the exhibitors will have the opportunity to display their products on stands, where visitors can look around, taste, and purchase the products. Apart from that, the exhibitors will also be able to present themselves and their products in the fair's marketing materials, as well as in the media which will be covering the event.
Just like in the past years, an evaluation of specific quality of prosciutto will be carried out by a committee comprised out of renowned experts and scientists. The assessment of quality will be based on the Ordinance on Prosciutto Quality Evaluation (Pravilnik o ocjenjivanju kvalitete pršuta). The evaluation is open to the public and is carried out with the presence of the committee members, the representatives of manufacturers and media. Only products of individual producers participating in the Fair are eligible for evaluation.
A rich culture and arts programme will be organised, including a promotion of traditional customs and crafts, as well as of cultural and artistic associations from Dalmatia and Lika.
Presenting manufacturers of wine, olive oil, and other autochthonous regional products Croatia's First Cluster of Women Entrepreneurs and Local action groups (LAG) from central and southern Adriatic will present their products within the exhibiting part of the Fair. This year, special attention will be given to the presentation of "Croatian Quality" and "Croatian Creation" marks. The Croatian Quality mark represents a guarantee to the buyer that the products are at the top of their respected class, as well as world-renowned. Products carrying the Croatian Creation mark are of special value. This stems from the fact that the products include traits of Croatian tradition, a scientific exploratory approach, and innovation or invention – in short, the products contain unique and distinctive traits.
The following are expected to take part in the Fair: major Croatian producers of prosciutto and dry-cured meat products, family farms, producers of prosciutto and Slavonian ham, representatives of regional meat industries, representatives of associations of producers, individual producers, major producers of Istrian and Drniš prosciutto, guests from Italy, Slovenia, Bosnia and Herzegovina, representatives of pig breeders associations, regional family farms breeding pigs, representatives of leading chain stores, hoteliers and caterers.
